Value in sun-dryingThis article was originally published in Foodnews
CONSUMERS in Abu Dhabi will soon be able to buy locally-produced sun-dried tomatoes, after Abhu Dhabi Farmers' Services Centre (FSC) agreed to collaborate with UAE University on production. The FSC will provide financing and field expertise for the 12 month project, while UAE University's Faculty of Food and Agriculture will supply personnel, equipment and specialist knowledge, Khaleej Times reported. Managing director of the FSD, Khalifa Ahmed Al Ali, said the project can potentially maximise the use of agricultural land and increase farmer incomes since it makes use of crops in lower-grade conditions. If successful, the project will add value to the agricultural marketing chain as dried tomato products tend to fetch higher prices than fresh tomatoes, he added.
