FSA sets new salt targets for hard cheeses

Dairy UK has welcomed the publication of new salt targets for hard cheeses set by the Food Standards Agency (FSA). The level - of 1.8g salt per 100g of product - was "undoubtedly challenging," said Dairy UK's technical director Ed Komorowski. But he said the industry would strive to achieve this as an average over all cheeses.
