Camembert lovers celebrate victory for small producers

This article was originally published in Dairy Markets

Small French Camembert maker Thierry Graindorge is celebrating a victory over dairy giants Lactalis and Isigny-Sainte-Mere after the Camembert Cheesemakers' Federation ( Syndicat du Camembert) ruled that milk used to make the famous French soft cheese must be unpasteurised to qualify for the Appellation d'Origine Contrôlée (AOC) label used on the most prestigious products in France (see separate article this issue, and DM, No 940, 20.03.08, p14).
