INDIA's National Dairy Research Institute has developed a long-life mango lassi beverage for retail sale. Lassi is a popular yogurt-based drink but problems like short shelf life, post acidification and whey synergies have reduced its commercial potential. The shelf life of mango can be extended up to 50 days at refrigeration temperature using bacteriocin obtained from propionibacteria.
