Southern canned greens benefit from processing innovation

A COOKING process innovation during the canning process has allowed American canned foods company Glory Foods to release a new range of southern-style collard greens. Called “New Richer Southern Flavor”, the southern greens, peas and beans and string beans products get “as close as one can get to southern authenticity in a can”, vice president Dan Charna said. A press release added that a “proprietary new cooking process during canning” cuts required cooking time by almost half, which preserves flavour. In addition to this process, the vegetables are seasoned with onions, sweet peppers, garlic and spices. The line was trialled this autumn and is now available in many groceries.
