Spain develops new means of making lycopene from paste

EXTREMADURAN tomato processing co-operative, Tomates del Guadiana, is the latest company to find a new way of using the natural lycopene content of tomatoes. The firm has developed a process to extract lycopene from tomato paste, which it is blending with olive oil as a consumer product, with the added benefit that mixing with a fat makes the compound easier to absorb by the body.
