Cashew apple colouring

BRAZIL's Sabor Tropical, a manufacturer of cajuína (a drink produced from cashew apples) has announced plans to launch a new natural food colorant extracted from cashew apple bagasse. Bagasse is a by-product of the cashew apple after juice extraction. Vladimir Pekic writes: the new product will be officially launched in two years and will be available as a replacement for artificial yellow colourings.
